Mock Frozen Mango Daiquiri
|1||large ripe mango, sliced|
|¾||cup chilled white cranberry juice (I use Ocean Spray)|
|1||ounce freshly squeezed lime juice|
|2||tablespoons superfine sugar|
|½||ounce simple syrup|
|fruit garnish (optional)|
In a blender, combine mango, cranberry juice, lime juice, sugar and simple syrup; blend until smooth. Add ice cubes; blend until daiquiri is smooth and thick. Serve in glasses with a fruit garnish.
Recipe makes 3 cocktails.
To make simple syrup, combine 1 cup water and 1 cup sugar in a small saucepan. Heat over medium heat, stirring occasionally, until sugar dissolves. Cool; store in refrigerator.
