Orange Poppy Seed Belgian Waffles

| 1 ½ | cups flour |
| 1 ½ | tablespoons sugar |
| 2 | teaspoons baking powder |
| ½ | teaspoon salt |
| 2 | eggs |
| ¾ | cup milk |
| ¼ | cup canola oil |
| 2 | tablespoons freshly squeezed orange juice |
| 1 | tablespoon orange zest |
| 1 | teaspoon poppy seeds |

Spray a Belgian waffle maker with nonstick cooking spray and preheat.
In a large bowl, stir together flour, sugar, baking powder, and salt until well mixed. In a small bowl, beat the eggs with a fork and stir in the milk, canola oil, and orange juice. Add the egg mixture to the flour mixture and stir until the batter is smooth. Stir in the orange zest and poppy seeds.
Ladle the batter onto the waffle maker according to the manufacturer’s instructions. Close the lid and cook until the waffle is golden brown on both sides. Transfer it to a platter and place in a warm oven while cooking the remaining waffles. Serve the waffles with warm maple syrup or fruit preserves.
Recipe makes approximately 8 6-inch waffles.
