Polynesian Steamed Vegetable Packets

| 2 | sweet potatoes, boiled until tender, peeled, and sliced into ½-inch cubes |
| 6 | fresh banana leaves |
| 2 | cups bean sprouts |
| ½ | cup hoisin sauce |
| 4 | green onions, white part sliced and green part julienned |
| 1 | carrot, peeled, cut into 3-inch lengths, and julienned |
| ¼ | pound fresh pea pods |
| coarse salt and freshly ground tri-color pepper, to taste | |
| toothpicks to secure packets | |
Preheat the grill until hot. Lay banana leaves out on a work surface, and cut into 12-inch squares with kitchen shears. Place 1/3 cup of the sweet potato cubes in the center of each banana leaf and top with a handful of bean sprouts; drizzle with some of the hoisin sauce. Top with sliced green onions, julienned green onions, julienned carrot, and pea pods. Season the vegetables with salt and tri-colored pepper.
Fold the lower edge of the banana leaf over the vegetables; then fold the upper edge over. Fold over the sides to form a square packet and secure each packet with a toothpick. Place the packets on the grill over low heat, and cook them 5 minutes on each side. Remove the packets from the grill, remove the toothpicks, and unfold the banana leaves.
Recipe makes 6 vegetable packets.
