Southern-Style Baking Powder Biscuits

2cups flour
1tablespoon baking powder
¾teaspoon salt
1/3cup shortening
¾cup milk

Preheat oven to 400 degrees. In a large bowl, stir together flour, baking powder, and salt. Cut in shortening until the mixture resembles crumbs. Pour in milk all at once and stir quickly just until moistened.

Turn dough out onto a lightly floured surface and knead 5 or 6 times. Roll the dough ½-inch thick and cut with a 2-inch biscuit cutter.

Transfer the biscuits to an ungreased cookie sheet and bake in a preheated oven 13 to 15 minutes until the tops of the biscuits are golden brown.

Remove from the oven, place hot biscuits in a cloth-lined basket, and serve with butter, jam, or honey.

Recipe makes approximately 14 biscuits.
