Simple Chicken Stock

| 1 ½ | Pounds Chicken Bones and Scraps |
| 1 | Celery stalk |
| 1 | Carrot |
| 1 | Onion |
Water to Cover
A few bay leaves and peppercorns
The stock is simple and the work is easy, you just need 5 hours of simmering time. Rinse the bones and chicken and place in a pot that will just hold it. Cover with water by one inch and add the bay leaves and peppercorns. Rough chop the vegetables and add them too. Bring just barely to a simmer and allow to simmer for about 5 hours. Skim any scum occasionally and top off with warm water if it gets low.
