Berry and Garden Salad with Sweet and Tart Vinaigrette

  • 1 bunch green leaf lettuce, rinsed, spun dry, and torn
  • 6 ounces fresh blackberries, rinsed
  • 6 ounces fresh raspberries, rinsed
  • 1 pint fresh strawberries, rinsed, hulled, and quartered
  • 1 tablespoon sugar
  • 1 tablespoon red wine vinegar
  • Dash of salt
  • 1/8 teaspoon onion powder
  • ¼ cup canola oil

Arrange salad greens on a platter and top with blackberries, raspberries, and strawberries.

In a small mixing bowl, whisk together the sugar, vinegar, salt, and onion powder until well mixed. Slowly add oil, whisking constantly, until the dressing is thick and creamy. Drizzle it over the salad and serve immediately.

Yield: 4 to 6 servings
