Blistered Green Beans & Scallions

- 1 pound green beans, rinsed and trimmed
- 2 bunches scallions, rinsed and root end trimmed
- 2 large cloves garlic, peeled and diced
- 2 tablespoons olive or grapeseed oil
- Sea salt & freshly ground black pepper, to taste
Light the wood fire and allow the flames to die down to a bed of hot coals. Place green beans, scallions, garlic, salt, pepper, and olive oil in a large plastic zipper bag. Close the bag and rub the beans and scallions with the seasonings.
Preheat a griddle over the hot coals. When it is hot, transfer the beans and scallions to the griddle and cook until they are tender and blistered. Serve hot.
