Campsite Honey Baked Apples

Core each apple, reserving the tops and leaving the bottom ½ inch intact. Fill apples with dried cherries and raisins, and season the interior with some of the cinnamon and allspice. Divide honey and butter evenly between the apples. Replace the reserved tops.

Wrap each apple in a square of parchment paper, then wrap each in aluminum foil. Place the apples in the coals and cook 25 to 30 minutes, or until the apples have softened and are fragrant. Remove them from the coals, set them aside 10 minutes to cool, then unwrap and serve.

Yield: 4 baked apples
