Game Day Veggie Tray| Christy Rost
- 1 pound package mini sweet peppers, rinsed
- 1 large cucumber, rinsed
- 1 head cauliflower, rinsed
- Favorite veggie dip or hummus
Early in the day, slice peppers in half lengthwise and remove seeds. Cut the cucumber into slices at an angle and cut the cauliflower into bite-size florets.
Arrange the peppers on a platter, cut side up, overlapping the peppers to form a pleasing design. Arrange sliced cucumbers in groups around the perimeter of the platter and garnish the dish with cauliflower florets.
Place a bowl of your favorite dips or hummus in one corner of the platter, cover, and chill until ready to serve.
