Yellow Mango Margarita| Christy Rost
- 1 wedge fresh lime
- 2 tablespoons sparkling or granulated sugar, for garnish
- 1 small, ripe yellow mango, peeled and cubed
- 3 ounces tequila
- 1 ounce triple sec
- 1 ounce simple syrup
- 1 tablespoon confectioners sugar
- 1 1/4 cups ice cubes
Moisten the rim of a cocktail glass with the wedge of lime. Pour the sparkling sugar onto a medium plate and dip the rim of the glass into the sugar; set aside.
Combine mango, tequila, triple sec, and simple syrup in a blender. Process on high until the mixture is smooth. Add ice cubes and process until the mixture is thick and all the ice has dissolved.
Yield: 1 cocktail
