Apple Cranberry Crunch

4 Cosmic Crisp apples, rinsed, cored, peeled and sliced ¾ cup fresh or frozen cranberries ½ cup sugar 1 ½ teaspoons Saigon cinnamon ½ teaspoon freshly grated nutmeg ¼ teaspoon ground allspice 1 cup old fashioned oatmeal ½ cup brown sugar, packed

Preheat the oven to 350 degrees. Place apples and cranberries in a large bowl. In a small bowl, stir together sugar, cinnamon, nutmeg, and allspice. Pour the sugar mixture over the apples and cranberries and gently toss so all the fruit is coated. Transfer the apple mixture to a medium casserole dish.

In a medium bowl, mix oatmeal and brown sugar with fingers until it is well mixed. Crumble the topping over the apple mixture to cover completely. Place the dish on a cookie sheet lined with parchment paper to catch any drips. Bake 40 to 45 minutes or until the apples are tender.

Serve warm with wedges of Carr Valley 6 Year Cheddar. Cover leftovers with foil and chill.

Yield: 6 to 8 servings
