Apple Spice Bread
| Christy Rost- 3 cups flour
- 1 cup sugar
- ¾ teaspoon baking powder
- ¾ teaspoon salt
- ¼ teaspoon baking soda
- 1 ½ teaspoons Saigon cinnamon
- 1 teaspoon freshly grated nutmeg
- ½ teaspoon allspice
- 3 eggs, at room temperature
- 1 teaspoon vanilla
- ¾ cup milk
- ½ cup canola oil
- 1 large or 2 medium Cosmic Crisp apples, rinsed, cored, peeled and chopped
Preheat the oven to 350 degrees. Spray two 9x5-inch loaf pans with nonstick spray-with-flour. In a large bowl, stir together flour, sugar, baking powder, salt, baking soda, cinnamon, nutmeg, and allspice.
In a medium bowl, whisk eggs with vanilla, milk and oil. Stir the egg mixture into the flour mixture to form a smooth batter. Stir in the chopped apple.
Divide the batter between the two loaf pans and bake 50 minutes or until a pick inserted into the center of the breads comes out clean. Cool breads 30 minutes, then remove them from the pans and cool completely.
Yield: 2 breads
Chef’s Note: If desired, whisk a small amount of milk into 1 ½ cups confectioners’ sugar to form a thick glaze. Drizzle over each loaf once the breads are cool.
