Lemon Berry Mocktail

- 1 lemon wedge
- Sparkling sugar, to garnish glass
- 2 medium strawberries, rinsed, cored, and quartered
- 2 ounces freshly squeezed lemon juice
- 1 ½ ounces chilled cranberry juice
- 1 ounce chilled simple syrup
- Squeeze of fresh lemon juice
- 1 ounce chilled club soda
Rub the rim of a cocktail glass with the lemon wedge to moisten. Pour a small amount of sparkling sugar into a saucer, dip the rim of the glass into the sugar, and set is aside.
In a BLENDi or other blender, add strawberries, 2 ounces lemon juice, cranberry juice, simple syrup, and lemon juice. Cover and blend until the mixture is smooth. Pour into the prepared glass, add club soda, and serve.
Yield: 1 cocktail
Note: To make simple syrup, stir together ½ cup water and ½ cup granulated sugar in a small saucepan. Place the pan over medium heat and cook until the sugar is completely dissolved, stirring constantly. Remove from the heat, set it aside to cool, pour the syrup into a jar, cover, and chill until cold.
