Sweet Noodle Kugle

  • 16-ounce package wide egg noodles, cooked 6-8 minutes, drained
  • 2 tablespoons unsalted butter, melted
  • 1 16-ounce container small curd cottage cheese
  • 2 cups (1 pint) sour cream
  • 3 Cosmic Crisp apples, rinsed, cored, peeled, and sliced
  • ¼ cup golden raisins
  • 8-ounce can crushed pineapple, drain, reserving 1 tablespoon juice
  • ¾ cup sugar
  • 1 tablespoon Saigon cinnamon
  • 1 ½ teaspoons freshly grated nutmeg

Preheat the oven to 350 degrees. In a medium bowl, stir together the cottage cheese and sour cream; set it aside.

In a large bowl, stir together apples, raisins, and crushed pineapple with 1 tablespoon of the juice. In a small bowl, stir together the sugar, cinnamon, and nutmeg; set it aside.

In the bottom of a greased large casserole dish or 9x13-inch casserole, place 1/3 of the cooked, buttered noodles. Top with half of the cottage cheese mixture and 1/3 of the sugar mixture. Arrange sliced apples and raisins on top. Add half of the remaining noodles, the remaining cottage cheese mixture, and half of the remaining sugar mixture.

Top with the remaining noodles and sprinkle with the remaining sugar mixture. Cover and bake 50 to 60 minutes or until the casserole is hot and bubbly.

Yield: 10 to 12 servings
